Caramelized Chicken Claypot

Serves 4


INGREDIENTS:
1 ¾ lbs skinless boneless chicken (dark meat)
¼ lb skinless boneless chicken (white meat)
¼ cup water
¼ fish sauce
½ cup dark brown sugar
1 tsp minced garlic
1 tsp dark or regular soy sauce
3 tbsp rice vinegar
1 tsp grated ginger
1 tsp black pepper
2 small Thai Chiles, break in half
1 clove shallot, sliced
1 Tbsp canola oil
1 sprig fresh cilantro
PREPARATION:
1. In a small saucepan, combine water, fish sauce, brown sugar, minced garlic, soy sauce, vinegar, ginger, pepper, chilies, and mix well. Set aside.
2. Heat a 2 quart pot, add oil. Fry the sliced shallots until brown. Add chicken and the sauce mixture. Bring to a boil and then turn the heat to medium. Stir occasionally. Cook until liquid is reduced by ½ (about 7 minutes)
